Ensuring Food Safety and Quality through Full The “Mass Merchandising” (MMD) System
The core of the Zensho Group’s operations is the “Mass Merchandising” (MMD) system. MMD is the in-house man-agement of every aspect of operations, from the production and purchasing of raw materials to the processing, distribution and the sale of food at our restaurants. Through MMD, Zensho offers safe, quality raw materials at appropriate prices, making possible stable supply and assuring the safety and quality of our foods. With the MMD system, we aim to continue to enhance the overall strength of the Group by increasing synergies between the Zensho Group companies.
AGRICULTURE
Stable Procurement of Safe, High-Quality Foodstuffs through Responsibility for Production Sites
The safe, high-quality foodstuffs used by Zensho are only purchased after on-site safety and quality inspections by Zensho staff. To ensure food safety, we have established an industry-leading analysis center and strict quality standards that surpass government-established levels for residual pesticides and other impurities. We also conduct soil and water surveys of the land used to produce our foodstuffs in order to ensure safety.

MANUFACTURING
Ensuring Safe, High-Quality Food with Strictly Controlled Production at Our Own Factories
Zensho’s food processing is carried out at in-house plants in 21 locations* throughout Japan. The modern and advanced equipment, including metal detectors and X-ray machines, is used to identify foreign objects. In addition to this thorough quality control system, each plant maintains an on-site Quality Test Center where sanitary, physical and chemical analysis is carried out to ensure the highest levels of safety and quality in accordance with the Food Sanitation Law of Japan. Zensho consistently provides delicious, fresh foods through production control based on sales forecasts.

LOGISTICS
Maintaining Freshness and Safety through Optimum Temperature Control While Speedily Delivering to Restaurants Nationwide
Zensho operates distribution centers in 18* locations throughout Japan for effi cient delivery to group restaurants in each region. In the distribution centers, products are stored and order picking conducted under strict temperature settings—Frozen (-18℃), Chilled (3℃), Fixed Temperature (15℃) and Room Temperature (25℃)—and delivered to all of our restaurants while maintaining quality and freshness. To reduce our environmental footprint, we have decreased transportation costs and cut CO2 emissions by using planned routes for delivery to restaurants in the same area and recycling used cooking oil into fuel.

It is the more than 3,000 Zensho Group restaurants throughout Japan that allow our customers to experience safe and delicious meals through the MMD system. Based on direct management, we take responsibility for our food until the instant it reaches our customers’ table to make sure they enjoy a safe, high-quality meal and a good time through a variety of restaurant styles and reasonably priced menus and a focus on the dining environment that includes every detail from the exterior to the tableware and the heartfelt service of our staff.
