In July 2026, Zensho 's Group Food Safety Advancement Division held the first Food Allergy Study Forum 2026 at Zensho Headquarters.
Thirty-two people participated, including researchers, food businesses, and consumer groups from both Japan and abroad.
At Zensho, we are committed to providing allergen information on all products served at our group restaurants so that our customers can enjoy their meals with peace of mind.
Furthermore, in order to realize a world where people can safely enjoy their food, we are learning the latest knowledge on food safety and exchanging information with various experts and food businesses.
This study group was organized by employees of Group Food Safety Advancement Division. Participants, transcending their roles as researchers, businesses, and consumers, learned from each other's knowledge in order to improve their ability to respond to food allergies.
In the first half of the workshop, under the theme of "For the Consumer," participants shared the latest knowledge on topics such as the current state of health damage caused by food allergies, trends in standards under the global food safety standard "Codex," and risk assessments by international organizations.
In the second half of the session, under the theme of "Practical Practices Required of Food Businesses," group discussions were held on how food businesses should provide consumers with a safe food environment, incorporating specific examples of initiatives.
An employee from Zensho 's Group Food Safety Advancement Division gave a lecture on food allergy countermeasures.
We shared examples of allergy incidents in Japan and overseas, how food allergies are documented in the Codex, and introduced Zensho 's initiatives, including providing information to customers and implementing internal countermeasures.
During break times, Zensho fair trade coffee is served and tea ceremony experiences are held.
It became a lively conversation among participants, transcending boundaries between affiliated organizations and industries.
Finally, in the closing remarks, we reiterated the points discussed during the day and declared our commitment to continue cooperating for the benefit of consumers, thus concluding the study group meeting.
A manager from the Allergen Bureau, a global organization working to solve food allergy issues, who participated in the study group, commented: "I felt that all the participating businesses were striving to improve consumers' lives. I believe this initiative was a great success and will lead to continued collaboration, so I hope that the connections made here will continue in the future. I think that the more we engage in dialogue and understand each other's perspectives, the further we can move forward. I felt that this study group played a wonderful role in building those connections."
