Zensho 's initiatives through food
It's the season for new rice.


Rice is the staple food of Japan.

At Zensho Group, almost all of our restaurants offer dishes that use rice. That's why we are absolutely committed to safety and quality.

Our staff members take responsibility for visiting the production areas, and we also conduct audits at rice milling plants, quality inspections of the rice, and taste checks. We are always striving to provide delicious rice.

This time, we will be visiting and reporting on a producer in Osaki City, Miyagi Prefecture, who is one of the producers nationwide with whom Zensho Group has contract farming agreements.

One day in October, the Osaki Plain was completely golden. The scenery suggested that "it looks like we'll be able to enjoy delicious rice again this year."

At Zensho, we first verify the safety of agricultural products by examining their production history, taking into account the surrounding environment, such as whether they are threatening the ecosystem, and we also inspect the actual products on-site to confirm their quality.

We always keep in mind that "better rice starts in the rice paddy," and we value above all else listening attentively to what the producers have to say.

The rice is dried locally before being transported to the rice milling plant.
Rice milling plants not only remove the husks and bran, but also foreign matter such as pebbles, and the technology for doing so has advanced incomparably compared to the past.

Furthermore, we are applying strict production management methods based on HACCP (Hazard Analysis and Critical Control Points) to our rice milling plants, strengthening hygiene management at both our own rice milling plants and contract milling plants.

After milling at the rice milling plant, the rice undergoes a taste analysis using infrared light to quantify its components, followed by a taste check by a human before being delivered to stores.

These rice varieties can be enjoyed at many restaurants, including Sukiya 's Gyudon, Hama-Sushi 's sushi, and Coco's 's rice.

For Japanese people, being able to enjoy delicious rice during the new harvest season is a source of great happiness. Zensho Group will continue to dedicate itself to ensuring that this happiness continues.
