A close look at rice experts.
Sukiya offers a wide variety of dishes, including Gyudon, curry, and eel bowls.
We are also particular about the rice, which is one of the elements that contributes to its deliciousness.
Sukiya 's Gyudon use high-quality domestic rice varieties such as "Koshihikari," "Hitomebore," and "Hinohikari," without any blending, and are prepared according to the region and season.
Gyudon) is said to have originated from gyunabe (beef hot pot), which began to be eaten in Yokohama during the Meiji era. Gyudon, which flourished in Japan along with the modernization of the country, and domestically produced rice, carefully cultivated to suit Japan's climate, are a perfect match.
This section introduces the initiatives of Zensho Group, including Sukiya.
Zensho Group conducts various research projects, including those related to rice and taste. We also work with our business partners to develop and sell specialized fertilizers to further improve quality and yield. What we value most is "doing things ourselves." We work together with our business partners, putting in the effort and sweat, to build a system that allows us to consistently manage every step of the process, from rice production to sales.
Zensho Group's rice buyers take responsibility and pride in the "deliciousness" of their rice, visiting production areas to check the cultivation conditions and inspect the processes at rice milling plants.
"My job isn't just about sourcing rice. From scientific research and rice paddy cultivation management to checking the milling process at the factory and storage methods during transportation, there are many ways and methods to ensure that we deliver delicious rice to our customers. All of these are interconnected, and none of them can be omitted. As the sales manager, I need to plan, operate, and manage every step of the process. I strive every day to ensure that we can confidently deliver safe and delicious rice to our customers," he says.
Zensho Rice, located in Fukushima Prefecture, plays a role in promoting Zensho Group's commitment to the safety and deliciousness of its rice.
To ensure safe and delicious rice milling, Zensho Rice has obtained the "Rice Milling HACCP" certification set by the Japan Rice Milling Industry Association. While handling the collection, milling, and delivery of rice supplied to restaurants such as Sukiya, they are constantly striving to improve the safety and quality of their rice.
Zensho Rice facilities include a quality inspection room where they conduct quality checks on milled rice and taste and aroma tests after cooking to ensure that the best quality rice is consistently delivered to stores. They also cook the rice using the same equipment and conditions as in actual stores to ensure product quality.
In addition, we randomly collect rice that has been delivered to stores nationwide and check daily whether the rice we provide to our customers meets the standards of Zensho Group. To ensure that we can provide rice of consistent quality at our stores, we conduct sampling at each stage: at the brown rice stage, during milling, and after milling following delivery.
Sukiya is pursuing even greater deliciousness and is undertaking "local production for local consumption" initiatives in some areas, such as Miyazaki and Iwate prefectures. Rice grown in the region is served at Sukiya in those areas for customers to enjoy.
Sukiya serves as one of the places that connects local customers with producers.
Producers have expressed their delight, saying, "It's a source of pride to know that the rice we grow is being served at a nationwide chain restaurant like Sukiya." They also have the opportunity to tour the restaurant's cooking process and rice-making equipment, and even enjoy Gyudon made with the rice they cultivated.
Sukiya the same commitment to cherishing the local community. We will continue to create restaurants that are rooted in the community and loved by many customers and producers.
