Zensho 's initiatives through food
High school students served fish they had farmed themselves at "Hama-Sushi".

Learn about the process from raising the fish to serving them.

In June 2022, students from Yaizu Fisheries High School in Shizuoka Prefecture learned about the process of how fish they cultivated themselves are distributed in the market, as part of a class at Hama-Sushi, with the cooperation of Zensho Group Labor Union Federation.

In this class, students will farm pufferfish and flounder at their school, which will Hama-Sushi. By actually seeing the process from when the fish reach the customer, students can learn about the flow of the fishing industry and the work involved.

On the first day of classes, the students observed the processing of pufferfish and flounder, Hama-Sushi to experience the process of cutting the fish for sushi.

The students, dressed in their uniforms, listen attentively to explanations about hygiene rules, how to use knives, and how to serve sushi.

After watching the employees demonstrate, it was finally time to try cutting with the sword ourselves.

After the cutting is finished, it's time for the much-anticipated tasting.
The shop displays posters of pufferfish and flounder that the students had created beforehand.

The students enjoyed sushi made with flounder and pufferfish that they had farmed themselves, which is sold at select stores for a limited time only.

After finishing their fish cutting experience and tasting, the students reflected, "We were delighted to hear that the pufferfish and flounder were more popular than we expected and that our stock was likely to run out sooner than anticipated. As fish farmers, we were very happy and gained confidence in the fish we raise." "When customers ordered flounder, it made us realize once again that raising them was worthwhile."

Furthermore, the teacher in charge expressed their gratitude, saying, "We believe that implementing such meaningful projects is extremely significant for fisheries education."

Hama-Sushi will continue to strive to be a restaurant that is loved by the local community.
