In October 2022, Zensho established a joint research chair, the "Food and Health Science Research Chair," with Kyoto University.
We aim to create a food environment that allows people to maintain their health functions effortlessly through delicious, enjoyable, and satisfying meals.
In recent years, metabolic syndrome, a precursor to lifestyle-related diseases such as diabetes, has become a cause for concern. Reducing carbohydrate intake is considered effective in preventing lifestyle-related diseases such as diabetes, but extreme carbohydrate restriction can put a strain on the body and, above all, diminishes the enjoyment of eating.
Therefore, this joint research program will utilize Kyoto University's AI (artificial intelligence) analysis technology, the latest instrumental analysis techniques, and the food resources and supply chain of Zensho Group to explore food ingredients that provide satisfaction with meals while maintaining health functions. The goal is to propose menus that are more delicious, satisfying, and allow for the maintenance of health functions without difficulty at Zensho Group restaurants both domestically and internationally, including Sukiya.
At a press conference held to announce the joint research, Professor Yasushi Okuno of the Department of Human Health Sciences, Graduate School of Human Health Sciences, Kyoto University, who is in charge of this course, commented, "We aim to apply the applications of AI or supercomputer simulations that we have cultivated so far to medicine and drug discovery to food. Rather than saying, 'It's okay if the food tastes bad as long as it's healthy,' we aim to develop technologies that balance deliciousness and health, and that are scientifically sound."
Nagai, the head of Zensho 's research and development department, who is also involved in the joint research program, stated the goal: "Generally, when people think of health, they imagine diets and other dietary restrictions. However, if we excessively restrict carbohydrates and other nutrients in restaurant products, the most important aspects, such as taste and satisfaction, can be compromised. By combining various research projects, we aim to create a society where customers can enjoy delicious meals without worrying about excessive calorie intake."
