In May 2025, an employee from Zensho 's Group Food Safety Standards Division gave a presentation at the 6th Food Allergen Management Symposium (FAMS 2025) held in Sydney, Australia.
Zensho In order to ensure that our customers can enjoy their meals with peace of mind, we are committed to labeling the allergens in the products we serve at our group restaurants.
In 2024, Zensho joined the Allergen Bureau, a global organization dedicated to solving food allergy issues. The Allergen Bureau collects the latest information and makes recommendations.
Upon learning of the FAMS event, which is managed by the Allergen Bureau, we were pleased to be the only restaurant company member and the first Japanese speaker at the event.
Zensho employee who gave the presentation had noticed the challenges of differing allergen labeling requirements across countries while working on allergen labeling on a daily basis. In recent years, travelers from various countries have been crossing national borders. Believing that an international standard for allergen labeling is necessary to ensure that people all over the world can enjoy meals with peace of mind, the employee chose this issue as the theme of their presentation.
The lecture included an explanation of allergen labeling in Japan, as well as an introduction to Zensho 's allergen labeling system for customers.
He then concluded his lecture by stating his view that future allergen labeling should be structured in a clear, two-tiered manner, consisting of a "globally standardized labeling rule" and "nationally tailored labeling rules" that match dietary habits.
Furthermore, during the discussion held after the lecture, participants from different industries such as restaurants, schools, and hospitals exchanged opinions on the differences in allergen management in their respective fields. Zensho employees introduced examples of allergen labeling using QR codes and employee training to prevent human error, which garnered significant interest from the participants.
Zensho employee, sharing their impressions of participating in FAMS, said, "Creating international standards for allergen labeling is extremely difficult, but we were able to show the participants the direction we should aim for in the future. We received questions and words of gratitude from the participants regarding Zensho 's efforts, and we felt that our efforts are being appreciated. Eating out is not only a food infrastructure, but also a place where customers can enjoy communication with those they come with. We will continue to work to be attentive to everyone, including customers with allergies."
Furthermore, a representative from the Allergen Bureau commented, "Zensho 's efforts in consumer-oriented allergen labeling and information provision were extremely beneficial to the participants. We look forward to their continued efforts in allergen management."
Zensho will continue to work towards achieving global food safety standards so that people all over the world can enjoy their meals with peace of mind.
