Manufacturing

We use safe ingredients to prepare delicious meals.
The raw materials, sourced from various regions,
It is prepared in a hygienic factory.

Manufacturing means cooking, right? I love cooking!!

Preparations before entering the factory

At the factory, we thoroughly manage employee hygiene, including ensuring thorough handwashing and removing hair and dust from the surface of clothing. We also monitor the health of our employees to ensure they are not suffering from infectious diseases.

Acceptance of raw materials

The raw materials have arrived by forklift!
There are more than you'd find in a supermarket!

Wash the vegetables and visually look for any remaining residue.

After thoroughly washing the vegetables, shine a light from below and carefully inspect them for any insects hiding between the leaves or any damaged leaves, and remove them as you go.
I've also found a caterpillar in a cabbage I bought at the supermarket!

heating

heating

You're going to cook it in a big pot, huh?
Heating reduces bacteria and other microorganisms present in the raw materials. Bacteria can spoil the taste of food and, in some cases, make people sick. It's a very important step, so I always record the temperature at which the food is heated.

The most important step

The most important step

In the cooking process, HACCP (Hazard Analysis and Critical Control Points) is an important concept for ensuring safety. It is important to follow established cooking methods, but within that, the most critical step is identified (this most critical step is called a CCP (Critical Control Point)). Then, the process of performing the CCP as prescribed is thoroughly checked and recorded. Typically, temperature control during heating and the process of removing foreign objects using X-ray detectors are designated as CCPs.

Bacterial testing

Bacterial testing

Even if things look clean, there might be tiny, invisible bacteria lurking around. To ensure the factory is clean, employees regularly inspect surfaces such as equipment to check for bacteria. Cooked food is also tested to confirm that the bacterial count is below a predetermined level.

Because we cook large quantities at once, a clean environment is essential. And to produce products of consistent quality, we follow established cooking methods.

Due to measures to prevent foreign object contamination, I wasn't allowed to bring my personal belongings into the manufacturing area.
Apparently, it's very important to remove bones and insects, and to reduce invisible bacteria through heating.
